Indonesia is a country that has a wealth of traditional culinary delights. Although Indonesia has the largest Muslim population, Indonesia has several traditional foods that use pork.

One of the traditional Indonesian foods that use pork is Se’i. What is se’i? Se’i is a traditional food from East Nusa Tenggara that uses pork with a unique cooking process that uses the heat of burning smoke.

The meat is cooked with firewood that is far away, so that it is not the flames that ripen the meat, but hot smoke. If just smoked, this meat can be eaten immediately by slicing it thinly. However, if this meat has been stored for several days, it must be re-fried, or cooked in a stir fry of papaya flowers and other vegetables.
